To remind you of its glimpse, keto diet is a low carbohydrate and high fat diet in which you depend on the ketosis process of losing weight. Ketosis is a process in which your body uses ketones to produce energy, which are derived from fat, in the absence of carbohydrates and glucose, and thus you lose weight.

Vegetarians always have this doubt about not being able to follow a vegetarian keto diet in India properly, due to the lack of food options. But to clear this myth, let me tell you that there are a number of Indian vegetarian options, with just some common Indian ingredients which you can use for your perfect low- carb, high- fat keto diet.

1. Keto Roti aur Baigan ka Bharta

Keto Roti

Indian Staple food is Roti but you can’t eat Wheat roti so we will use almond flour. Almond flour is low in carbohydrates and high in fact content compared to wheat flour, which makes it an ideal ingredient in your keto diet. Also, the additional benefits of flax seeds make this recipe completely keto friendly. Flax seeds are rich in good fat, which is Omega 3 and low in carbohydrate content.

Ingredients:

  • 1 cup almond flour
  • 2 tbsp ghee
  • 2 tsp ground flax seeds
  • 2 tbsp psyllium husk powder
  • 1cup warm water
  • Salt as required

How to make:

  1. Mix all ingredients together and knead it into dough of proper consistency.
  2. Let it rest for 15-20 minutes.
  3. Pull out small rolls or spheres. Take a butter paper or parchment paper and set it out on a flat tabletop.
  4. Place the ball on it and put another butter paper over it. Make it flat using a rolling pin.
  5. Cut the roti in a circle of desired size, preferably 6 to 8 inches.
  6. Heat a flat pan and roast the roti properly on both sides.
  7. Apply ghee over it and serve hot.

 Baigan ka Bharta

Going eggplant for dinner? Well, it’s an excellent choice given the low amount of carbohydrates and high amount of nutrients. One cup of eggplant contains only 8 grams of carbohydrates, and is extremely low in calorie count.

We will add many spices like cumin seeds which have many weight loss properties.

Ingredients:

  • 1 medium sized eggplant
  • 1 tbsp olive oil
  • 1 tsp cumin seeds
  • ½ cup chopped onions
  • 2-3 garlic cloves
  • 1 tsp chopped ginger
  • 1 chopped green chili
  • ½ tsp coriander powder
  • ½ tsp turmeric powder
  • Salt as required
  • ½ tsp garam masala
  • 1chopped tomato
  • ½ cup chopped coriander leaves

How to make:

  1. Roast the eggplant on the stove directly, until the skin is crumbled and the eggplant is completely soft and cooked from the inside.
  2. De-skin the eggplant and collect the pulp in a blender. Blend it well.
  3. In a pan, heat some olive oil and add the dry spices such as cumin seeds, green chili, ginger and mashed garlic cloves. Add chopped onion and tomatoes and let it cook for a while.
  4. Add in the blended and mashed eggplant mixture. Add salt, turmeric powder, garam masala and coriander powder.
  5. Mix well and let it cook for a while. Add in salt further as per required.
  6. Garnish with chopped coriander leaves and serve hot.

2. Keto Chilli Paneer

Who doesn’t like paneer? Paneer is your go-to food during ketogenic vegetarian diet. It is not only low in carbohydrate content, but is high in fat and extremely delicious.   • 1 cup paneer cubes

  • 1 tsp chilli sauce

How to make:

  1. Lightly season paneer cubes using salt and pepper. Heat a pan and put in olive oil.
  2. Roast the paneer cubes in slightly until they are golden brown. Set aside.
  3. In the same pan, heat some olive oil and add ginger, garlic and green chili, with onions and capsicum. Mix well and cook them until the onions are light brown and capsicum softens.
  4. Add soya sauce, vinegar, chili sauce thereafter. Mix well. Add a little amount of water, and cook further.
  5. Then, add the cooked paneer cubes in it and cook further. Add chopped spring onions on the top and serve hot.

3. Keto Puree with Dal Tadka

Keto Puri Recipe :

Indian Loves Puri and in Keto diet yes you can eat them. Soy flour and almond flour are great substituent to wheat flour, given the low carbohydrate count and high  fat and protein count. Yes, protein in essential in a keto diet as well, as we have previously discussed. So, this combination is ideal for the recipe.

Ingredients:

  • 1 cup vital wheat gluten
  • 1 cup soy flour
  • ½ cup almond flour
  • 2 tbsp inulin powder
  • 1 tsp Xanthan gum
  • 2 tsp psyllium husk
  • 1 tsp baking powder
  • 2 cups coconut oil for frying
  • 1 tsp cumin powder
  • 10-15 grams egg replacer
  • 2 tbsp ghee
  • 1 tsp coconut powder (unsweetened)
  • 1 tsp chili powder

How to make:

  1. Mix all the dry ingredients listed above and knead dough using ghee and water. The dough should be of medium smooth consistency.
  2. Separate dough into balls and roll them separately into a size of puri using a rolling pin.
  3. Heat coconut oil in a deep pan and start frying each puri individually until goden brown. Flip the side to fry it evenly on both sides.
  4. Drain out excess oil from the puri using tissue and serve hot.

 Dal Tadka

Use Lentils or Dal in Limited quantity, we cannot skip Lentils as Vegetarian, as they are one of main source of protein. But since they are high in carbohydrate content, we need to use just a small quantity to balance the protein and carbohydrate content.

We will also use another weight loss food Spinach.

Ingredients:

  • 50-60 grams red split lentils
  • 2-3 tbsp ghee
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 2-3 garlic cloves (chopped)
  • 1 cup shredded spinach leaves
  • Salt to taste

How to make:

  1. Wash the dal and let it soak in water for 10-15 minutes.
  2. Take a pressure cooker and heat ghee in it. Add cumin seeds and garlic and let it splutter for a while.
  3. Add the dry spices which are turmeric powder and red chili powder and let it cook for a few seconds.
  4. Now add the dal to it and mix well. Add 2-3 glasses of water and mix well again. Add salt and shredded spinach.
  5. Close the lid of the pressure cooker and let it cook until 3-4 whistles. Turn off the stove and let it sit for a while.
  6. Serve with coriander leaves or plain.

4. Cheesy Pakora

Oh the humble cheese! Who does not love cheese in dinner? And when you get to eat it on a diet, it is a complete blessing. Cheese is high in fat and low in carbohydrate content, which helps the ketosis procedure and helps you to lose fat quickly.

Ingredients:

  • ¼ cup chickpea flour
  • ½ tsp carom seeds
  • ¼ tsp red chili powder
  • ½ tsp baking soda
  • 1 tbsp kasuri methi
  • 1 tbsp mixed herbs
  • Salt to taste
  • Coconut oil to fry
  • Cheese cubes

How to make:

  1. Mix chickpea flour, carom seeds, red chili powder, baking soda, kasuri methi and salt. Add water until it forms a thick liquid consistency.
  2. Take a cheese cube and split it in half. Add mixed herbs or any other seasoning in middle.
  3. Heat coconut oil in a deep pan.
  4. Dip the split cheese cube in the chickpea mixture until it is evenly covered.
  5. Fry it in the heated coconut oil until golden brown and crispy. Serve hot.

5. Keto Paneer Parantha

Again, the benefits of paneer and almond flour as discussed above are highly beneficial in a keto diet. And you must have seen that we are using these two ingredients quite commonly in most of the recipes.

Talking about coconut flour, using it in small quantities is useful for a keto diet due to the high carb content but also due to its nutrients and high fat content. We are using coriander leaves for better taste and this also reduces weight.

Ingredients:

  • ½ cup almond flour
  • ½ cup coconut flour
  • 1 tsp psyllium powder
  • ½ tsp baking powder
  • 1 tbsp yogurt
  • 1 tbsp coconut oil
  • Salt to taste
  • ½ cup grated paneer
  • ½ cup chopped onion
  • 1 tbsp chopped garlic
  • ½ tsp red chili powder
  • ½ tsp garam masala
  • 4-5 finely chopped coriander leaves

How to make:

  1. Mix coconut flour, almond flour, pysllium powder, baking powder, yogurt, oil and salt. Add water and knead all ingredients to form fine dough.
  2. Set the dough aside for around 25-30 minutes with a moist cloth covered over it.
  3. To prepare the filling inside, mix paneer, onion, garlic, red chili powder, garam masala and coriander leaves. Mash them properly.
  4. Now, prepare small balls out of the set dough. Flatten out one of those balls and place some filling in its centre. Cover it with dough and form a ball.
  5. Take a parchment paper and place the ball in the centre. Place another parchment paper over the ball and flatten it like a roti using a rolling pin.
  6. Heat a flat pan and put some ghee or coconut oil over it. Place the flattened paratha over the pan and cook until crispy and slightly brown. Flip the paratha over and cook.
  7. Serve hot with yogurt or pickle for dinner.

6. Keto Cauliflower Pizza

Pizza is now famous in India as in US. But For keto we will use Cauliflower Base. Cauliflower is one of the most sought after ingredients for a keto diet, containing just 2.9 grams of carbohydrates per cup.

Not only is it healthy, it also substitutes for the taste of the replacement ingredients and tastes amazingly well. And of course, the benefits of cheese on a keto Vegetarian diet, we have discussed it previously as well.

Ingredients:

For pizza base:

  • 1 cup cauliflower florets
  • ½ cup shredded parmesan cheese
  • ¼ cup cream cheese
  • ¼ cup mozzarella cheese

For marinara sauce:

  • 1 cup chopped tomato
  • ½ cup chopped onion
  • 2 tbsp olive oil
  • 1-2 tbsp butter
  • 1 tbsp minced garlic
  • 1 tsp oregano
  •  1 tsp red chili flakes
  • 1 tsp chopped basil

How to make:

  1. Blend the cauliflower florets in a processor to beak it into sand consistency.
  2. Heat a pan and roast the shredded cauliflower for 6-7 minutes.
  3. Spread a dry cloth and place the roasted cauliflower over it. Squeeze out any excess water from it.
  4. Mix the cauliflower, salt, pepper, cream cheese, parmesan cheese, and mix well.
  5. Spread this mixture on a baking paper into a flat bread for the pizza base. Bake it at 190 C for around 18-20 minutes.
  6. For the sauce, heat some oil in a pan. Add onions, garlic, chili flakes and cook well.
  7. Add tomatoes, salt, pepper, and water. Cook for a while.
  8. After around 10-15 minutes, add oregano and basil to it. Your sauce is ready.
  9. Spread the sauce over the baked pizza crust and top it with some mozzarella cheese. Bake until the cheese melts and your pizza is ready.

7. Keto Bhindi Masala

The Famous Spicy Indian Sabzi – Bhindi Masalad. Not only is okra low in calories and low in carbohydrate content, it is also gluten free. And yes, it tastes amazing as well. All these factors add up to crown okra as one of the most keto- friendly ingredients, which can help in steady weight loss.

It is also packed with essential nutrients. We will use Turmeric powder here, Turmeric use in many forms in Weight loss.

8. Keto Punjabi Kadhi

We have discussed the numerous benefits of okra for keto and weight loss, and why it is a hero in all keto recipes. This recipe also contains yogurt, which is another prime keto ingredient. It is a dairy product and low in carbohydrate content. It also contains protein which is required in some proportion on your keto diet.

  • 1 cup yogurt
  • 2 tbsp ghee

  • 1 tsp mustard seeds
  • 1 tsp hing
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 4-5 curry leaves
  • 1 tsp grated ginger

How to make:

  1. Take a pan and heat some ghee in it. Add onions, garlic and ginger and cook for a while until onions are translucent.
  2. Blend the mixture with water to form a paste of smooth consistency.
  3. In the same pan, heat some ghee and add the spices, mustard seeds, cumin seeds, hing and curry leaves. Add in the blended onion paste to it.
  4. Add other dry spices such as turmeric powder, red chili powder, cumin powder and salt, and mix well.
  5. Add yogurt, water and fried bhindi to it. Mix well and top it with garam masala. You can also add coriander leaves to garnish it.

9. Keto Masala Rice

Another Staple Food in East and South India is Rice. And hail the cauliflower! Need I praise the hero of keto once again? You must have by far known how cauliflower is essential on a keto diet and how it helps in losing weight through keto.

Being low in carbohydrate and calorie content, it replaces all starchy vegetables quite well in terms of nutrients, calories and taste factors.

How to make:

  1. Heat some ghee in a pan and add peppercorns, bay leaf and ginger garlic paste.
  2. Add onions, tomatoes and peanuts let them sauté for a while.
  3. Add yogurt, mix well and let it cook further. Add tomato puree thereafter.
  4. Now, add all the other spices such as turmeric powder, red chili powder, garam masala, green chilies and salt.
  5. Add the cauliflower and mix well. Then, add the coconut milk and let the rice steep for a while.
  6. Cover with a lid and keep on stirring occasionally. Garnish with coriander leaves.

10. Keto Paneer butter Masala

Vegetarians love this Curry. Paneer and heavy cream, two essential dairy items which are high in fat and low in carbohydrate content, are definitely a part of almost every keto recipe. Paneer, as we discussed above, has 21 g of fat and 18 g of protein per cup, and only 1 g of carbs, which makes it an ideal keto ingredient.

  • 1 cup chopped onions
  • 1 tbsp ginger garlic paste
  • 1 cup chopped tomatoes
  • 2 tbsp ghee

  • 2 tbsp cashew nuts
  • 2 tbsp butter
  • ½ tsp red chili powder
  • ½ tsp garam masala
  • ½ tsp Kitchen King masala
  • 1 tsp kasuri methi
  • ½ cup heavy cream

How to make:

  1. Heat some ghee in a pan and add onions, tomatoes, ginger garlic paste and some water, and cook further.
  2. Add cashew nuts, more water, and cover with a lid to cook further.
  3. Blend the mixture in a blender to make a smooth paste.
  4. Heat the mixture in a pan and add more butter. Mix well.
  5. Add other dried powder spices such as turmeric powder, red chili powder, Kitchen King masala and salt, and mix well.
  6. After the gravy is cooked properly and thickened, add the paneer cubes and mix well.
  7. In the end, crush the kasuri methi in between your palms and add it to the mixture. Also, add ½ cup of heavy cream to the sabzi and mix well.
  8. You can also add brown sugar if you want, if you like your recipe sweet. Serve with keto naan or keto roti.

11. Cashew vegetable korma

Although a handful of cashew nuts are not harmful, using them without proper measure can add up to your carb content, without you knowing about it. Yes, the carb content in nuts is definitely low in proportion to their fat content, but even then you should not go overboard with the usage.

Ingredients:

  • 1 cup chopped onions
  • 1 tsp minced garlic
  • ½ cup cashew nuts
  • 1 tbsp olive oil
  • 1 tsp minced ginger
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt as required
  • 1 cup yogurt
  • 1 tbsp brown sugar
  • 1 cup boiled vegetables

How to make:

  1. Heat some olive oil in a pan and add ginger, garlic and onions. Sauté for a while.
  2. Add in the boiled vegetables and cook further.
  3. Add 1 cup of water or vegetable stock (if available). Cook it for a while.
  4. Add in other dry spices such as turmeric powder, coriander powder, salt and brown sugar. Mix well and remove from heat after a while.
  5. Add yogurt and cashew nuts (toasted) to serve.

12. Low Carb Peanut Curry

Yes, peanuts are high in carbohydrate content, but a small quantity won’t harm your ketogenic process, unless of course you use more quantity than what is suggested. Ghee is another keto friendly and healthy ingredient, which contains a huge amount of healthy fat and should definitely be consumed on a keto diet.

Ingredients:

  • 1 cup roasted peanuts
  • 2 tbsp ghee
  • 2 tsp cumin seeds
  • 1 tsp lemon juice
  • 4-5 curry leaves
  • 1 tsp minced ginger
  • 1 green chili
  • 1 cup grated coconut

How to make:

  1. Put the roasted peanuts in a blender (they should be well toasted with a brown color and peeled off) and add ginger, chili, cumin seeds and coconut. Blend them all together.
  2. Heat some ghee in a pan and add cumin seeds and curry leaves. Let them splutter for a while.
  3. Add in the blended paste and mix well.
  4. Add water and salt and cook for a while. You can serve it with keto roti or keto rice.

13. Cauliflower Mac and Cheese

Cauliflower, cheese and cream, as we discussed above, are all keto friendly ingredients, and if combined together, make for one ultimate keto recipe.

Ingredients:

  • 2 cups grated cauliflower
  • 1 cup chopped onion
  • 1 cup cheddar cheese
  • 1 cup heavy cream
  • 1 tbsp butter
  • ½ cup nuts (almonds or walnuts)
  • ½ tsp grated nutmeg
  • 1 tsp thyme
  • ½ tsp cayenne pepper (or red chili powder)
  • ½ tsp garlic powder
  • 1 tsp red chili flakes
  • 1 tsp minced garlic

  1. Heat some butter in a pan and add garlic and chili flakes. Let the sauté for a while.
  2. Add the grated cauliflower and salt to it and cook it for a while.
  3. Set it aside and heat butter again in the same pan. Add the other spices such as garlic powder, cayenne pepper, nutmeg and thyme, and cook for a while.
  4. Next, add cream and cheddar cheese to it and cook for a while. Turn off the stove and add pepper to it.
  5. Mix the cheese sauce with the cauliflower mixture and put it in a deep dish.
  6. Bake it for 10 minutes and top it with nuts and cheese.

14. Keto Coconut Rice

Apart from cauliflower and coconut (both amazing ingredients for keto meals), we have used cardamom in this recipe, which is not only high in nutrition but less in calorie count as well. Even though 1 tbsp of cardamom contains only 4 g of carbs, you should be careful while using it to not go overboard with it.
